Happy Monday my friends! Today I’m going to share with you this week’s meal prep.
To get started, I followed the same basic process that I always do when I’m planning out the week’s meals, which I discussed in detail in last week’s post, How to Make Meal Planning Work for You. I used Pepperplate to plan out the meals, and this is what this week looks like.
As you can see, I like to make dinners that give me leftovers for lunch so that I’m not prepping a million things. But when I think I’ll run out of leftovers, I have a few easy go-tos, and “wraps” is one of them. They’re just tortilla wraps with cheese, lunch meat, and whatever other fillings I have on hand.
Again, I prefer to use Pepperplate on the computer when doing the planning because then you can see this pretty view of the entire week, which isn’t visible from the mobile app. I then used the app to create my grocery list. You can do this by going to each recipe and clicking “add to shopping list”. It brings up a window with all the ingredients and you can pick and choose which ones you want to add to the list, so that you’re not adding things like salt and pepper or other ingredients that you already have in the pantry.
My shopping list was made.
Pepperplate also has a feature that allows you to customize your aisles so that they’re in the same order as your grocery store. I haven’t done that yet, but so need to.
So off I went to the store, and once I got home, I got to prepping, using the very fancy to-do list for today that I had made based on my plan.
Two hours later, prepping was done! I think two hours is pretty dang great, considering that I will have very little work to do for the rest of the entire week.

- Boiled eggs- I eat the whites for snacks. I’ll be adding a post soon on how to get the perfect, easy-to-peel boiled egg
- Mixed veggies and hummus- another snack
- Sauce and dressing for fish tacos- doing this ahead means that all that has to be done at dinner time is cook the fish. Recipe coming soon!
The only thing left to do today is make dinner tonight, which is chili. The leftovers will give us the rest of the meals we need to get us through the entire week!
I can’t say enough how AMAZING it is to already have this done for the whole week. When I come home from work, I’m generally not so motivated to cook a big meal (or do much of anything). To have dinner ready to eat after just a couple minutes in the microwave is so great, and the fact that that the food is homemade, and not pre-packaged/processed (not to mention more expensive), is straight up awesomesauce. Yep. Awesomesauce.
